<p>St. Patrick's Day takes place on March 17th of every year. It's a day that is celebrated by people around the world, but originated in Ireland as a religious day to celebrate the teachings of Christianity by St. Patrick, the Patron Saint of Ireland. Because St. Patrick is the Patron Saint, the day became a national holiday.</p>
<p>Although the holiday is still a tradition in Ireland as well as other countries around the world, it is the United States and Canada that added the drinking of green beer to the tradition of St. Patrick's Day. The trend has widely caught on, as has wearing green clothing, so much so that if you ask any <a href="http://www.college-blogs.com/" target="_blank">college kid</a> today how he or she celebrates St. Patty's and you'd be sure to hear the definitive answer: "By wearing green and drinking green beer!" But if you happened to be in Ireland for the holiday, you probably wouldn't be able to even find the leprechaun-colored libation at any bar.</p>
<p>The tradition of wearing green was also made in the USA, and it's said to represent people showing their Irish roots or heritage for the day. In Ireland, they don't wear green to celebrate, but they do adorn their clothing with shamrock pins to symbolize the teachings of the holy trinity by St. Patrick.</p>
<p>Keeping with the tradition of using St. Patrick's Day as an excuse to throw a party, it's also not uncommon in the U.S. to see green-colored foods or pot-of-gold themed desserts on the appetizer table - next to the green beer or Guinness, of course. </p>
<h2>Making Green Beer</h2>
<p>Luckily for any party planner (or party-goer), making green beer is incredibly simple - so simple, in fact, that you won't even need to call upon <a href="http://www.onlinecookingschools.net">beer brewing schools</a> to do it. Here are the necessary supplies and steps to create the popular drink.</p>
<p><strong>You'll Need:</strong></p>
<p>Beer (light or dark colored)<br>Green food coloring (liquid, not gel)<br>A mug or glass</p>
<p><strong>Instructions:</strong></p>
<p>First, place two drops of green food coloring into the bottom of your beer mug or glass. Next, add the beer. You don't need to stir as pouring the beer will mix the liquids together on its own. That's it - you've got your green beer.</p>
<p><strong>Items of Note:</strong></p>
<p>Although two drops of green food coloring is enough to make your beer green, you may want to add more if you are looking for a darker shade. Do remember though that a little food coloring goes a long way, so don't put too many drops into one glass. Also, if you are using dark beer, the green color will naturally be darker. On another note, be careful when using the food coloring as it will temporarily stain your skin as well any clothing it comes in contact with.</p>

Wow, just thinking about it makes a true brewery "wannabe"owner daze off and smile.<br />

I've been debating to myself what would be the best plan of attack to execute one of these things successfully.<br />
And I devised a list of things that are important to consider.<br />

<ol><li><b>Starting Size - </b>Ok I think we all know why this is a huge complication. So here's the problem; brewing equipment is very expensive. <br />
If you start too big with a bunch of loans/investors you might not be able to find all the costumers right off the back and run into big losses your first few years of operations which many breweries I read about reported. Then again you<br />
On the other hand if your too small then you might be able to handle the demand and growing can be very costly, as well as running a pica - micro size brewery can become very labor intensive. Therefore you don't have to be pressured with high operational costs, quickly find a large audience, and forced to having a steady beer. </li>
<li><b>Brewpub</b> - Many brewers know about the successful story of Sam founder of Dogfishead craft brewery. He started out with 200,000$ and spent roughly 97.5% of the money on the restaurant and the remaining 5K on brew equipment. When I first started brewing I knew so little about the fermentation stage... and now when I look back at it, it seams that I must of went wrong on every level. Horrible. So heres some basic's.<br />

<ul><li><b>Temp</b>: 65-75 deg. </li>
<li><b>Primary</b>: 10 days normally is enough; 2-3 weeks in primary is another option too if you want to skip a secondary stage.</li>
<li><b>Secondary/Conditioning</b>: 7-12 days of cold conditioning (35-40 deg.) helps most of the remaining sediment drop out and give you a clearer, fresher beer. This is important even for dark beers. More time will only improve the beer too.</li>
</ul><br />
<br />
<span class="Apple-style-span" style="font-size: large;">Lagers </span><br />
<br />
<ul><li><b>Temp</b>: 55 deg. </li>
<li><b>Primary</b>: 10 days normally is enough too, depending on how active the yeast is but normally it will take longer then ales. After most of the fermentation is done and I'm a few points away from my TG I raise the temperatures for 2 days to about 65 deg. to preform a diacetyl rest. I would advise to do a secondary since after the diacetyl rest there will be plenty of sediment which is unwanted in the final conditioning stage of the beer. </li>
<li><b>Secondary/Conditioning</b>: same as ale.</li>
</ul><br />

Cleaning anything really isn't much fun; furthermore bottles put up a real fight and when their a little older it makes it a whole lot worse.<br />

So I devised a method where I really don't have to do to much.<br />

<ol><li>Besides kegging I have an igloo cooler in my "sanitizing room" with a 5 gal igloo cooler full of water and oxy-clean. So whenever I have an empty bottle laying around I just throw it in there. It works great and is not to demanding. Also It cleans the bottles so well whenever I put a new bottle in there with labels they just fall right off!</li>
<li> Once its full I take the bottles out rinse them and put them on my beer tree.</li>
<li> For the final sanitation step before I bottle I stick the bottles from the beer tree into the wash machine, on the sanitize setting, with no soap. </li>
<li>I also soak the caps in <a href="http://www.amazon.com/Learn-To-Brew-LLC-Sanitizer/dp/B000NB6YNI?ie=UTF8&tag=thewi0a-20&link_code=btl&camp=213689&creative=392969" target="_blank">iodophor</a> <img alt="" border="0" height="1" src="http://www.assoc-amazon.com/e/ir?t=thewi0a-20&l=btl&camp=213689&creative=392969&o=1&a=B000NB6YNI" style="border: none !important; margin: 0px !important; padding: 0px !important;" width="1" />and water prior to using them.</li>
<li>Then fill them up and cap them. </li>

Almost 60 of those horrible little bottles and thats just with 5 gallon batch now imagine a 10 or 15 gallon!! That must be horrible. Also then it naturally carbonating requires sugar and leaves a pretty murky beer when shaken, which isn't bad for the brewer but it scares off others.. A keg is like one large bottle to clean and the lines aren't too bad plus you don't need any sugar and your beer is evenly carbonated to any level you are looking for.</span></li>

<li><b> Just start </b>- At first I watched countless videos and read countless articles and books about it. Even though it did build important fundamentals it also made it seem like a more daunting task. So my best advice is go for it and after a few batches you'll figure things out by trial and error. This article will hopefully relieve you of some of those Gilligan mistakes.</li>
<li><b>Develop a Basic Brew plan -</b> try to avoid doing what i did and start brewing without some brew plan. By now you should know most of the steps to brewing, so make sure you have every part down. The basics are obvious such as mash tun, and large brew kettle, but consider things like the lautering tun and how your make shift or hopefully a more professional sparge arm will work.</li>

It is much more simple and less demanding then all grain and it gives you enough room to experiment with different beer types and methods. Also during this stage you build strong fundamentals in brewing knowledge that will later allow you to move onto bigger and better things (like all grain).<br />

<b>Extract Brewing Equipment: </b><br />

<ol><li>5 gallon boiling kettle.</li>
<li>5-6.5 gallon fermenter, preferably two</li>
<li>siphon tool helps</li>
<li>Wort chiller or another way to cool kettle quickly!</li>
<li>Large mixing spoon </li>

</div><div><b>Extract Brewing Procedure: </b></div><div><ol><li> Sanitize!!! The boil temperatures (170+) will kill any bacteria so you must clean everything that will come in contact with the beer from the time it's cooled from the kettle, up till it is safely tucked away in the fermenter.</li>
<li>Read though the recipe kit instructions so you know whats coming and check to see if you have all the necessary ingredients.</li>
<li>Fill about 2.5 gallons of water into the kettle and bring it to a rolling boil. You can add more or less water too at this point, more water will result in more wart which will bring more flavor to the beer. (if partial mash then add the grains from the time you add water till a little into a rolling boil, about 20 min., and make sure it doesn't go over 170 deg. or the grains will leak phenol enzymes.). Then add your malt syrup and later hops as your recipe demands.</li>
<li>Once after usually a 60 min. boil you need to cool it down as fast as possible to avoid contamination to about 60-90 deg depending on if it's an ale or lager. (ale is normal around 80+, while lagers require lower temperatures. A wort chiller is the tool of choice here but an ice bath in a sink gets the job done too. (If you have a wort chiller it is best too put it in 10 minutes prior to the end of the boil so it can be easily sanitized.)</li>
<li>Now you need to get the beer into the fermenter. I would advise to siphon the beer into it from the kettle, with your pre-sanitized siphon tool, so to avoid the heavy sediment but you can also just pour it in directly (which will definitely require a secondary fermentation phase about 1-2 weeks after the cooking date). Then add any more water to the fermenter to reach 5 gallons.</li>
<li>Last but DEFINITELY not least you can pitch the yeast strait to the wort (unfermented beer) or rehydrate it first in some warm water and sugar to get it going faster. Both ways work fine. Now seal off your fermenter and put the air-lock in place and your good to go.</li>
<li>Leave the Fermenter in a warm 75 - 85 deg. if it is an ale and 30-50 deg. for a lager.</li>
</ol></div><div>Thats a small investment to make a beer that out tastes most large commercial beers.<br />

Online there were a whole bunch of sick looking wort chillers but the prices were ridiculous. Therefore I went ahead and did some research on how to build my own and eventually took on the task. <br />
The main sizes for Wort Chillers were 1/4'', 3/8'', and 1/2'' x 25' or 50' copper tubing.<br />
I decided to go for the 3/8'' because it felt like a nice compromise between the two; allowing enough pressure to quickly shoot the water through. Also after some research in the store and online 1/4'' really felt to small and the tubing might give to the intense pressure change from the thick hose to the small 1/4'' tubing.<br />

For the length I went with the 50' copper tubbing because it allowed there to be a lots of surface area to cool the wort and then if i ever upgraded my boiling pot the wort chiller would still do work.<br />

These are some of the parts I used thought by the end of it all I returned some and changed some others out.<br />
The best thing to do is go to your department store ( I went to Lowe's) and assemble something till it works out.<br />

Also don't forget the Teflon Tape!!<br />
Thats crucial for a solid seal.<br />

Even though this was as basic as it got and the final beer (even though it was a Pale Ale) tasted more like a wheat beer then anything else.., I think somehow the Brewing fever caught onto me and without brewing one more batch with that embarrassing 2 gallon home brew kit. This Pilsner definitely put the sparkle into my eyes and showed me what could be accomplished. From then on I went on to purchase more brewing equipment and recipes. <br />
Six batches and 27 gallons later I got the feel for the process a little better. During that time I went out and purchased tons of new equipment including: two new buckets for fermenters, a chest freezer off craigslist, a temp. control, and even a keg system.<br />
I am currently trying to muster up enough equipment to start my first all grain batch, I found a large 6 gallon pot I can use for boiling and will probably order a 10 Gallon Rubbermaid Water Cooler (Just Ordered it~!) and then build my own sparge tank which I will show the process in another post.<br />

So now I started AG brewing and it is a rush! Theres so many different components to it that you got to keep in mind it can get intense but with every batch it is getting smoother and smoother.<br />
At first I had a sketchy little setup outside that allowed gravity to feed the wort/water from one devise to another but now I did some shopping and built a metal frame and and added levels for another gravity fed system to save on pumps. I'm using induction to heat my pots but it took a bit of digging to get the right pots and heater I'll show it all in the <a href="http://winklerbrewery.blogspot.com/2010/12/all-grain-brewing.html">All Grain</a> section of my blog.<br />

Just placed an order for a ridiculous amount of new brew equipment! Its gonna get wild.<br />
Most the stuff should be coming in by Jan 7th; what a great way to start off the new year. I'm getting a new chest freezer cause my old one from craigslist died on me and my lagers took it hard. Then new large induction brew pots, 4 corny kegs, new recipes, and some small miscellaneous things too.<br />

I'm working hard on building my <a href="http://winklerbrewery.blogspot.com/2010/12/all-grain-brewing.html">All Grain</a> homemade brew sculpture and just ordered new pots, kegs, ingredients, and other brew necessities, even a brand new chest freezer! <div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;"><div style="margin-bottom: 0px; margin-left: 0px; margin-right: 0px; margin-top: 0px;">Jan/ 08/ 2011</div><div>Today was a wack brew day! Woke up at 7:30 and didn't finish till a little past 4, a bit more then 9 hours of brewing; It was awesome! I brewed an Altbier and an Oatmeal Stout and you can read about them on my <a href="http://winklerbrewery.blogspot.com/search/label/The%20Next%20Beer">Next Beer Page</a>. Both were very rich, with different types of malt and very unique characteristics in smell and taste. I just cant wait to try them! I even tapped some of the things i did today so I can cut together an AG brewing video for you guys. It'll be up soon so check back asap!</div><div>Also recently the brew equipment came that I wrote about on Dec. 31. This is a good begging of something Great. And what I mean by that is a constant flow of home brew. No more gaps</div><div><br />

Today one of my fermenter cracked and when I opened my chest freezer there was beer everywhere! It was the worst. I need to start taking more pictures. I was able to save most of the beer but it was very depressing 1) i lost a fermenter 2) I lost a lot of beer 3) I ended fermentation early and quickly kegged it because I didn't have any more fermenters.<br />
Besides from that horrible mess.. Every things been going really good. My brew sessions are getting better and better with each brew. I am contently modifying my set-up and I'll be sure to post some new pictures soon. I also catered my uncles party with 10 gallons of beer; an Oatmeal Stout and AltBier. It went extremely well and people really were surprised about the Stout.. I was too. Good stuff.<br />

April/ 25/ 2011</div><div>Wow time "Flys" when your brewing. 3 weeks ago I began brewing a Maibock which will be done perfectly for the middle of May or Mai in German which will be really exciting. I was in Jacksonville a few days before easter and went to Seven Bridges, a Grille and Brewery there and ordered a Maibock and man was that a rich beer with a BIG Kick. Good stuff, It got me like twice as pumped for mine although theres was 7% ABV while mine only going to be about 6%. Ooo well either way Im already drooling. :)<br />

I got some left in my keg and Hope to make it last for a little longer. I'll be in Germany soon and going to visit the becks brewery and hopefully many more. I think it'll give me a good idea to see what it takes to brew beer in large scale. I'll post pictures </div></div></div></div><br />
